- 250 g chicken livers
- 3 cm piece of fresh ginger
- 5 garlic cloves, chopped finely
- ½ tsp cumin
- 1 tsp coriander powder
- oil for frying
- ¼ tsp turmeric
- 1 hot green chilli, finely chopped
- ½ lemon, juiced
- mint to taste
- sliced onion

Clean the chicken livers under running water and pat dry
- Mix together the ginger, garlic, cumin, turmeric, chilli and half the lemon juice
- Add the chicken livers to the mix
- Heat oil to hot in a frying pan, add the livers, red pepper and green beans
- Do not over stir; rather just shake the pan
- Cook for 4-5 minutes, until brown on the outside but still pink on the
inside (longer if you prefer them well done)
- Add the coriander and mint and check the seasoning
- Add the other half of the lemon juice.
- Add some sliced onion just before serving
