• 250 g chicken livers
  • 3 cm piece of fresh ginger
  • 5 garlic cloves, chopped finely
  • ½ tsp cumin
  • 1 tsp coriander powder
  • oil for frying
  • ¼ tsp turmeric
  • 1 hot green chilli, finely chopped
  • ½ lemon, juiced
  • mint to taste
  • sliced onion
  1. Clean the chicken livers under running water and pat dry
  2. Mix together the ginger, garlic, cumin, turmeric, chilli and half the lemon juice
  3. Add the chicken livers to the mix
  4. Heat oil to hot in a frying pan, add the livers, red pepper and green beans
  5. Do not over stir; rather just shake the pan
  6. Cook for 4-5 minutes, until brown on the outside but still pink on the
    inside (longer if you prefer them well done)
  7. Add the coriander and mint and check the seasoning
  8. Add the other half of the lemon juice.
  9. Add some sliced onion just before serving
